Christine Bullock has been teaching fitness all over the world for almost two decades. She began her career as a dancer, but soon found herself adding numerous certifications to create a well-rounded background, such as Pilates, Pre & Post Natal, Nutrition, Barre, TRX and HIIT, as well as has a B.A. in Psychology and Education. This quick and easy pizza quiche recipe makes even the biggest pizza lovers ohh and ahh! Made with chopped up and sautéed veggies, eggs, marinara sauce, and some cheese, you really can’t go wrong. Not only will it satisfy your craving for the popular Italian meal, since it’s a lightened up version, it won’t leave you feeling all heavy and bloated afterward.⁠⁠

2 cups sautéed chopped veggies⁠⁠
3 eggs⁠⁠
1/2-1 cup pizza sauce (depending on how saucy you like it)⁠⁠

As long as I can get time to think and breathe and practice and workout for ME I can be available for everyone else. I love getting creative on Passover and indulging I love getting creative on Passover and indulging in things that make you says what!???? That’s a Passover cake? 

Today I’m inspired by @pamelasalzman outrageous lemon yogurt cheesecake from her first cookbook and decided to make my cheesecake in mini form. Perfect for an indulgent weekend bite.

This year I found graham crackers kosher for Passover but you could also do an almond crust like this:

3/4 almond flour 
2/3 cup brown sugar
2/3 cup gluten free matza meal or flour
8 tbsp butter, melted
Pinch of salt 
Zest from 1/2 lemon

Are you a bunless burger fan? Since I went gluten Are you a bunless burger fan? Since I went gluten free 14 yrs ago I stopped the breaded meat sandwich altogether-def like my meat and veggies to shine! Truth is once you nix the bun you kinda don’t miss it because of how unstuffed you feel without the bread. We def do the gf bun here and there but....not needed! Perfect timing with Passover-aka the breadless holiday approaching! 

Here’s a fun idea for your next burger meal! 

🍔Make you usual patties (shape more flat than rounded!). These are turkey veggie burgers-I also have a sneakily good for you burger recipe in my cookbook link in stories! 
🍔 Place one burger on plate. Fill with your fave fixings! Condiments-tomato-lettuce-onion-pickles etc
🍔Top with second burger! Yeah, I eat with a fork but you can totally dig in dirty! 
🍔Serve with someonething crunchy-side salad or colorful veggie chips!

★My kids eat salad-but they didn't always used to!⁠
★My labradoodle zoe ate last nights salmon dinner (good thing the kids like salad!)⁠
★I go upside down every day for 5 minutes (but can't keep up with my 8 year old's gymnasts tricks)⁠
★For years I worked out daily because I hated my body, now I work out because I love my body. ⁠
★I hated it so much I went on every diet on the planet. Tried it all out so you don't have to!⁠
★Now, I advocate a more "fad-free" approach to living. ⁠
★I wake up 4-5am but I sometimes fall asleep at 8pm!⁠
★I drink coffee and wine and sometimes sneak candy with my kids and I eat this new cauliflower crunch salad every single day for breakfast! ⁠
★We keep kosher and we are gluten free (at the least I think my older kids still are?...)⁠
★I'm learning to control the things I can and let go of the one's I can't! 😘. Yup, I'm a recovering perfectionist.⁠
★I chase sunsets and sunshine and am obsessed with creating magic moments.

This morning I found myself knee deep in piles of This morning I found myself knee deep in piles of STUFF! Passover cleaning is insane people. In case you’re not familiar, you can’t use any of your usual things from pans and dishes to cutlery, containers, appliances and food! So it’s a total kitchen makeover I’ll be updating some tips and tricks in stories because even if you don’t clean for Passover it’s a great opportunity to spring clean. You should see the piles of garbage...

Anyhow I’m taking a break to workout and clear my mind...I start early to avoid stress and this morning-after clocking two hours of prep before 7am!

This pic was from a few weeks ago and I love looking back at peaceful moments. It’s actually possible to close your eyes and go wherever you need to be. (Ps because of COVID and last min plans and flight cancellations we found ourselves in Hawaii with almost no summer clothing so this is me meditating in a dress🤷‍♀️). 

Easy tips for self care during crazy days:
🧘‍♀️for every 2 hours of intense work take 15 min off
🧘‍♀️walk-meditate-push-ups-stretch ⬆️
🧘‍♀️take a bath!
🧘‍♀️put on face mask-let seep while cleaning
🧘‍♀️blast music and have fun while working

📌Recipe:
* 2 cups gluten free flour
* 1/2 cup almond flour
* 2 teaspoons baking powder
* ½ teaspoon baking soda
* ½ teaspoon salt
* 2 large eggs
* ¾ cup sugar
* ¾ cup milk (regular, coconut, almond or your fave!)
* ¼ cup canola or coconut oil or butter
* 2 teaspoons pure vanilla extract
* 1 cup kale or spinach 
* 2 ripe bananas
* The teeniest touch of green food coloring for POP! 

Blend it up, bake 350F, 12-14 minutes, makes around 25

If you’re celebrating you’ve probably decided it time to think about the big feast+7 days that starts in less than two weeks! Ill share my breakdowns and lists and how I start prepping in advance in stories all week. Planning ahead means less stress later! Many ppl worry about what to eat on this bread-less holiday but we are gluten free (and largely grain free) most of the year so Passover is just about whipping up good old clean food! Because this is how we eat year round-most if not all of the recipes in my cookbook are either totally Passover approved or with a few of my flips and tricks can be modified to be! Is anyone else totally bewildered by the fact that Is anyone else totally bewildered by the fact that’s it’s almost Passover? I’m reluctantly dragging myself to start fathoming this and planning! But as much work as it is to start planning, it’s far more work NOT to plan and stress at the last minute....If you are fully making your kitchen Passover ready and have the ability to get it ready a tad early, consider baking and freezing so your home is stocked and you don’t have to worry later. I’m bookmarking this passsover friendly chocolate cake by the Uber talented @kosherbaker and starting to contemplate menus etc...Paula has a great new instant pot cookbook out too for anytime of the year! Wish I had one for Passover such a great tool to save time. Either way, if you’re gluten free or grain free etc Passover is a great holiday full of those recipes.
