One of the most memorable things I did during quarantine in 2020 was to seek out the best bartender in Tel Aviv. Since bars were closed for months, I took private lessons at The Bellboy Bar. It was such a fun highlight of that time and each week we’d learn the classics and then how to flip them into one-of-a-kind creations like this Valentine’s day cocktail. The most fun part of bartending is the creativity involved while dreaming (and sipping) up new creations.
This drink is one of my favorites from Bellboy Bar and the absolute perfect Valentine’s day treat. Especially with the smeared chocolate on the rim, just don’t bite the glass! (Bellboy says this has happened countless times). I changed this recipe (with management’s approval) to make it more home-bar friendly. Since I don’t love a very sweet drink, I also switched up the sugary stuff. This is the perfect balance of sweet and tart. If you like yours stronger, add more gin. If you like it sweeter, add simple syrup. As always, it’s best to taste and adjust.
Rings-A-Bell Drink
Ingredients
- 2 ounces grapefruit juice
- 1 ounce gin
- 1 ounce Sauvignon Blanc
- 1 ounce lychee liqueur
- 1/2 ounce pineapple juice
- 1/2 ounce Campari
- squeeze lime juice
To top it off:
- melted chocolate
- chili flakes
- coarse salt
Instructions

Prep your glass: Remove glass from freezer. Place melted chocolate on a shallow plate and smear the rim of the glass decoratively with chocolate. Sprinkle with chili and salt and set aside.

Add all drink ingredients to a shaker with ice. Shake vigorously and strain into the chocolate rimmed glass.

Drink immediately!
