Caramel Swirl Gluten-Free Brownies

These caramel swirl gluten-free brownies are such an indulgent, delicious Valentine’s Day treat. And, a bonus they boast a surprisingly gooey center that will melt your heart! The secret to achieving a gooey center for any brownie recipe you follow is to watch your oven carefully and underbake your brownies slightly. There is really nothing worse than a dry brownie!

I love the surprising touch of baking in different shaped pans and for Valentine’s Day there’s nothing more enjoyable than using a heart shape! You could also bake these in individual heart shaped silicone molds for the perfect brownie portion.

To remove the whole heart shaped brownie without it falling apart, it’s best to cool your brownies first and then refrigerate them to harden. Then the entire brownie will come out easily, and you can plate and slice it.

Caramel Swirl Gluten-Free Brownies


  • 6 oz semi-sweet chocolate chips
  • ¼ cup chocolate syrup
  • 1 stick unsalted butter
  • 1 teaspoon vanilla extract
  • 2 eggs lightly beaten
  • ¾ cup sugar
  • 1 pinch of salt
  • ½ cup gluten-free flour
  • 2 tbsp caramel sauce


  1. Preheat oven to 355℉.

  2. Prepared a double boiler and melt chocolate. Add syrup and butter.

  3. Beat chocolate and butter until smooth, then add vanilla extract and eggs, and mix.

  4. Sift sugar, salt and flour and add to chocolate mixture.

  5. Bake in a heart shaped mold until just set, check frequently.

  6. Drizzle 2 tablespoons caramel sauce over the entire pan. Using a toothpick or knife, swirl the caramel into the batter.

  7. After the brownies have cooled drizzle additional caramel sauce over the top.
