Indulgent Banana Bread French Toast With Coconut Cream and Caramelized Bananas

Most mornings, my family and I opt for a simple plate of fresh eggs with sauteed veggies. But, some days call for a special, more indulgent breakfast, like this Banana Bread French Toast!

Unlike a traditional French toast, this dish relies on banana bread as the base. Since this popular morning meal is all about the bread, the kind you use makes a huge difference. And, let me tell you, banana bread offers a unique flavor that will have you dreaming of a second slice. If you have a favorite banana bread recipe or boxed mix then great — use that. But, I personally like to cheat and use store-bought banana bread. It saves so much time and tastes just as delicious!

Amp up the nutritional content of your dish by opting for a gluten-free or grain-free bread and sneaking in some hemp and chia seeds to the milk/egg mixture. Plus, for some Flexible Flips, try this recipe with carrot bread or zucchini bread too!

  • 1 teaspoon vanilla
  • Pinch of salt
  • 1 loaf of banana bread

Instructions

  1. For french toast: whisk the eggs, milk, cinnamon, vanilla, and salt in a shallow baking dish.

  2. Place banana bread slices in the mixture to coat. Then flip to allow the bread to soften, about a minute on each side.

  3. Meanwhile, heat butter in a skillet. Add soaked bread slices and cook until the underside is lightly brown, about 2 minutes. Flip and cook similarly on the second side.

  4. Transfer french toast to a large serving platter.

  5. For bananas: Wipe skillet clean with a paper towel. Heat butter then add banana slices to the pan, cooking on each side for 1 minute until caramelized. Remove and place on platter.

  6. For topping: In a blender, whip coconut cream (remove water) and vanilla until smooth. Drizzle over french toast platter. Add a drizzle of maple syrup and finish with a garnish of berries for color.
