As we enter yet another month of social distancing and quarantine, are you starting to get sick of the same old meals? When it comes to home cooking, many of us continually cycle through the same dozen or so recipes. Heck, I have an entire cookbook and still find myself digging into the same breakfasts, lunches, and dinners. If you’re in need of some new inspo, I’ve got just the thing.

Crispy Tuna Fritters Recipe
Crispy Tuna Fritters
Ingredients
- 2 cans tuna, in olive oil
- 3 large eggs
- Sautéed chopped veggies, try onions, mushrooms, carrots, zucchini, or anything you have on hand
- Salt and pepper, to taste
- Olive oil, for frying
Instructions

In a mixing bowl, combine all ingredients. Set aside.

Over medium heat, lightly coat a skillet with olive oil.

Once the oil is hot, but not smoking, spoon patty-size portions of tuna mixture into the pan.

Let cook for several minutes, until the bottom is cooked and easy to flip. Flip and repeat.

Serve immediately.
Recipe Notes
- Serve with sriracha mayo dipping sauce!
- These last in the refrigerator 3-4 days.
