Slow Cooker Turkey Chili with Beans, Beer, and Broth

This slow cooker turkey chili with beans, beer, and broth will warm you from inside as you watch the Super Bowl this year! I snuck in some cubed pumpkin for a touch of sweetness and nutrition. Feel free to omit the pumpkin completely or flip it and swap with sweet potatoes. Most slow cooker recipes have you sauté your turkey in a separate pot first, with the idea that the sear adds extra flavor. My method is a more flexible idea for you that doesn’t compromise on delivering the best slow cooker chili ever.

Slow Cooker Magic

I literally dump all of the ingredients into the slow cooker on high for the first 2 hours and then on low until I’m ready to serve dinner (approx another 6 hours). But if you have an urge to wash up another pot, feel free to sauté your turkey and onions first and then add to the slow cooker. Or not!  When ready to serve, grab a ladle and serve directly from the slow cooker. My family loves chili with toppings like tortilla chips, avocado, fresh limes and cilantro. I like to pop the toppings in cute bowls nearby so everyone can customize their own bowls. For kosher reasons we don’t eat cheese and meat together so we use dairy free cheddar! If you are not a fan of beer in your chili, leave it out and add a cup more broth instead.  This is such a fun meal to prep for a healthy and stress free dinner. My favorite part is assembling the slow cooker in the morning and having dinner on the table in seconds. This dish makes a hearty 4-6 servings depending on how hungry you are. 😉

Meatless Option

A great feature of chili is its flexibility. You can totally make this vegetarian with just the beans and add chickpeas. Omit the turkey entirely, or you can swap out cubed tofu or meatless crumbles instead. Experiment and add any of your favorite vegetables. Mushrooms would add terrific flavor and texture! Just add what you have and let the magic of the slow cooker help this family meal come together.

Chili Toppings

A great way to jazz up chili is by offering a variety of toppings! A few favorites of mine that boost the chili favor are avocado, cilantro, and scallions. Add any of these toppings to this slow cooker turkey chili with beans, beer, and broth for a flavor boost!

Did you know scallions helps keep bones strong and cilantro energizes your skin? Neither can guarantee a Super Bowl win for your team though. Sorry!

Slow Cooker Turkey Chili With Beans, Beer, and Broth

Ingredients

  • 2 tablespoons vegetable oil
  • 1 pound ground turkey dark meat
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 1 tablespoon cumin
  • 2 teaspoon chipotle chili pepper
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper
  • 1 cup pumpkin or sweet potatoe cubed
  • 1 small red bell pepper diced
  • 1 can crushed tomatoes 28-ounces
  • 3 tablespoons tomato paste
  • 1 can black beans 15-ounces
  • 1 can beer 12-ounces
  • 2 cup low-sodium chicken stock
  • 1 teaspoons salt to taste

Chili Toppings

  • Corn tortilla chips
  • Lime wedges
  • Sliced scallions
  • Shredded cheddar cheese
  • Fresh jalapeno peppers chopped
  • Cilantro chopped
  • Avocado sliced
  • Hot sauce

Instructions

  1. Add all ingredients into a slow cooker on high heat. Cover with a lid and cook for 2 hours on high.

  2. Reduce heat setting to low for 6 hours.

  3. Add toppings to separate bowls for choosing.

  4. Enjoy!

  5. Store leftovers in an airtight container in the refrigerator for up to 5 days.
