This roasted veggie rainbow bowl is simple flexible meal packed with a rainbow of healthy veggies!
As a busy mama of four, one of the hardest parts of my week is figuring out what to make for dinner. And when I talk to other parents, they’re often struggling the same way.
Personally, I love meals that require very little prep, or meals that you can prepare almost everything ahead of time so that when dinner time rolls around everyone can just plate up their own food. Dinner, done.
If you’re looking for a hearty meal on the days you want some hearty comfort food but still want to eat light, this is the perfect meal.
I like to serve it up buffet style so everyone can mix and match their bases and fillings based on their preferences.
Start with a base of quinoa, rice, kale or assorted greens.
Then, top with roasted veggies (these need to be prepped in advance!)
Just spread your favorites on a sheet pan, drizzle with olive oil, salt and pepper and a teeny squeeze of lemon and roast on your oven highest heat for around 12 minutes or until veggies look a tad charred but are still crisp).
Then, choose your protein.
For this bowl I shredded some bought rotisserie’s chicken which saved me a lot of time but you can also cook up some chicken, steak salmon, tofu and more. Assemble a few bowls of fresh veggie garnishes for crunch and color. You might like to include red cabbage, arugula and fresh herbs and top your bowl with your favorite dressing or try one of my tahini recipes that really finish this all with flavorful creamy pack of flavor.
The best part? Store all the leftover components separately in containers in the fridge for leftovers and create a whole new meal the next day! You can chop all of your leftover veggies and add them to omelettes or sauces or toss them into a soup or fold them into this 6 ingredient marinara sauce-get creative!
