Lemon Caper Salmon

My new favorite way to make the most delicious salmon in minutes is this Lemon Caper Salmon. It’s effortlessly elegant, so hearty, healthy and satisfying.  I’m excited for you to try this!

This is one of those dinners that makes you feel like you’ve pulled off something special  –  even if you only had 25 minutes to make it happen. It’s buttery and lemony with little pops of briny capers, and it comes together so quickly you’ll wonder why you haven’t been making it on repeat.

All you need is a salmon fillet, a lemon or two, a handful of capers, real butter, salt, and pepper. That’s it. Everything goes into one baking dish – no searing, no sauce pans, no stress. As the salmon bakes, the lemon slices soften and caramelize, the butter melts into a silky sauce, and the capers release just enough punchy flavor to cut through the richness. It smells like something you ordered at a restaurant, but it’s all happening right in your own kitchen.

The beauty of this dish is its simplicity. The salmon stays juicy and tender with just the right amount of crisp on top. The lemon adds brightness and freshness, while the butter and capers create that perfect balance of rich and zingy. It’s everything you want in one bite  –  warm, clean, flavorful, and comforting without being heavy.

Nealy’s Tips

  • Pat the salmon dry before you bake it so the top gets a little color.
  • Place lemon slices right on top of the fish so they roast gently into the flesh, and scatter the capers at the end so they stay plump and punchy.
  • And don’t forget to spoon that buttery lemon sauce over everything when it comes out of the oven – it’s gold.
  • You can play around with this one. Swap the lemon for lime or orange if that’s what you’ve got. Add chopped herbs like dill, parsley, or basil. Skip the butter and use olive oil if you want to go dairy-free. Craving a little heat? Sprinkle in some chili flakes. Want texture? Toasted almonds on top are amazing.

This salmon goes with whatever you’re feeling – roasted veggies, a crisp salad (have you tried my Baby Gem salad with crispy Halloumi?), mashed potatoes, wild rice, or even just some grilled bread to soak up the sauce. Leftovers are incredible cold and make the easiest next-day lunch. Toss them into a wrap, salad, or omelet and you’re set.

Lemon Caper Salmon

Ingredients

  • 1 kg whole salmon fillet, skin on
  • ½ stick of butter
  • 2 lemons (1 juiced + zested, 1 sliced into thin rounds)
  • 1 small jar capers
  • salt and pepper

Instructions

  1. Preheat your oven to 425°F (220°C)

    Line a baking tray with parchment paper or foil for easy cleanup.

  2. Prepare the salmon

    Check for any pin bones and remove with tweezers or your fingers.

    Pat the salmon dry with paper towels, then season both sides with salt and pepper.

  3. Prepare the lemons:

    Zest one lemon and set the zest aside.

    Juice the same lemon and set the juice aside.

    Slice the second lemon into thin rounds to layer on top of the salmon later.

  4. Make the lemon-caper butter

    In a small saucepan, gently melt half the butter (about 30g). Add in the lemon juice, zest, and drained capers. Let it bubble for about a minute, then remove from heat.

  5. Layer the flavor:

    Pour half of the lemon-caper butter into the bottom of the tray, creating a rich base.

    Lay the salmon on top, skin-side down.

    Dot the top of the salmon with the remaining cold butter cubes.

    Drizzle the remaining sauce over the top of the fish, making sure those capers are evenly spread.

  6. Bake

    Roast the salmon for 16–20 minutes, or until it flakes easily with a fork and is just cooked through in the center. (Cooking time may vary depending on thickness.)

  7. Serve

    Spoon any extra sauce from the pan over the salmon before serving.

    Optional: garnish with fresh herbs or lemon slices for an extra pop!
