This is my new go-to dressing that elevates any salad to a whole gastronomic level. White balsamic is much milder than regular balsamic dressing. I like it for its unique flavor and its mild sweetness. If you can get your hands on mango-flavored white balsamic, you’ll be in for a win as the mango gives the whole dressing a tropical twist! You can totally just use regular white balsamic instead, or feel free to add a few chunks of fresh or frozen mango into the blender. If you add fresh mango, hold back on the maple syrup until you’ve tasted the dressing to see if it needs additional sweetness. I love serving this on my baby gem chicken salad or my crazy colorful spiralized salad. Remember to always dress your salad slowly. It’s best to underdress a salad and then taste to see if it needs more dressing than to overdress and get a soggy mess!
Mango White Balsamic Dressing
Ingredients
- ¼ cup mango white balsamic vinegar, or regular white balsamic vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon maple syrup
- 1 small shallot
- 1 clove garlic
- ½ cup extra virgin olive oil plus more to taste
- salt and pepper to taste
Instructions

Place all the ingredients, except olive oil, in high speed blender, blend until smooth.

Slowly drizzle the olive oil into the blender. Blend. Taste. If dressing is too tangy add slightly more olive oil.
