Beef Lettuce Cups

This new appetizer is a favorite of mine. It was created by accident one day (as many good recipes are) when I had some leftovers to play with. If you’re looking for a fresh and simple weekend bite or a well-balanced light meal idea, these beef lettuce cups are the perfect marriage of nutrition, texture, and flavor. Make sure you use high quality and well-sourced grass-fed beef to reap the health benefits! Drizzle some pesto, this creamy sriracha dressing, or your favorite dressing on top to take these beef cups to the next level! YUM.

Beef Lettuce Cups Recipe

Beef Lettuce Cups

Prep Time 15 minutes
Cook Time 15 minutes
Total Time 30 minutes



  • 1 onion chopped
  • 1 cup mushrooms sliced
  • 2 cloves garlic
  • 1/2 lb grass fed ground beef
  • 1/2 red bell pepper
  • 1/2 yellow bell pepper
  • 1 teaspoon cumin
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • Salt and pepper to taste

To assemble

  • Butter lettuce one head


  1. Sautee onions and mushrooms until soft and slightly brown.
  2. Add beef and garlic and cook until half cooked and slightly pink.
  3. Add peppers and seasoning. Cook until an aroma develops, just a few minutes. 

  4. To assemble, spoon a heaping tablespoon of beef into the center of a piece of butter lettuce.
  5. Drizzle your desired dressing on top and serve.
