This green pesto salad dressing is packed with herbs and greens so it is super good for you and delicious … my favorite combination. I love finding creative ways to sneak spinach into just about anything. This recipe doubles as a fantastic marinade for fish and vegetables.

Green Pesto Salad Dressing Recipe

Green Pesto Salad Dressing

Nothing beats an amazing homemade salad dressing. Making your own salad dressing is actually so much easier (and healthier) than most people think!

Ingredients

  • 1 clove garlic
  • 1 shallot
  • 2 tablespoons of Pili Nuts
  • 1/4 cup fresh parsley
  • 1 small sprig fresh tarragon
  • 6-8 leaves fresh basil
  • 1/4 cup loosely measured raw spinach
  • 3 tablespoons lemon juice
  • 1/2 tablespoon agave nectar
  • 1 teaspoon Dijon mustard
  • 1/2 cup extra virgin olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Using a Vitamix or hand blender - pulse garlic, shallot, nuts, parsley, tarragon, basil, spinach, lemon juice, agave and mustard. Scrape down sides.
  2. Add olive oil.
  3. Taste.
  4. Season with salt and pepper.
  5. Use your favorite greens as a base, add raw vegetables and top with your favorite protein.
  6. Store in a refrigerated glass jar for up to 2 days.
  7. Dressing may need to sit at room temperature after refrigeration.
