This new appetizer is a favorite of mine. It was created by accident one day (as many good recipes are) when I had some leftovers to play with. Beef Lettuce Cups
Ingredients
Beef
- 1 onion chopped
- 1 cup mushrooms sliced
- 2 cloves garlic
- 1/2 lb grass fed ground beef
- 1/2 red bell pepper
- 1/2 yellow bell pepper
- 1 teaspoon cumin
- 1 tsp paprika
- 1/2 tsp chili powder
- Salt and pepper to taste
To assemble
- Butter lettuce one head
Instructions

Sautee onions and mushrooms until soft and slightly brown.

Add beef and garlic and cook until half cooked and slightly pink.

Add peppers and seasoning. Cook until an aroma develops, just a few minutes.

To assemble, spoon a heaping tablespoon of beef into the center of a piece of butter lettuce.

Drizzle your desired dressing on top and serve.
