Almond Butter Protein Balls

Who doesn’t go a little nuts for nut butters? From my Healthified Apple Donuts to my No-Bake Chocolate Chip Energy Bites, almond butter is a staple in our pantry. If you have a jar on hand, and you’re looking for a quick and easy-to-eat-on-the-go snack option, whip up a batch of these Almond Butter Protein Balls by my new friend Heather from MyLifeWellLoved.

They take you just minutes to make and there’s no fancy kitchen equipment needed. Just mix all of the ingredients together and pop them in the freezer to set. You’ll be left with a nutritious treat that’s great after a sweat session or in between meals to keep tummy grumbles at bay. Got kids? They’re also a smart after-school nibble. You can even bump them up a notch by adding a few chocolate chips or nuts (your kids will love you for the addition)!

 

Almond Butter Protein Balls

Ingredients

  • 1 Cup all-natural almond butter
  • 1/2 Cup honey
  • 1/2 Cup coconut flour
  • Finely ground flax seeds, optional
  • Coconut flakes, for coating

Instructions

  1. In a mixing bowl, combine all ingredients.

  2. Roll into small bowls. 

  3. Roll the small balls in coconut flakes or simply dust tops with flakes. 

  4. Place in freezer to firm.
