Her recipes are appealingly simple and delicious.
The key to eating well — Saskia and I both agree — is preparing in advance. And when you can prepare something nutritious in a short period of time, you’re on to a true winner. These energy bites can be made in under five minutes and will power you through tummy grumbles between meals.
Saskia makes a big batch on a Sunday, and stores it in the fridge. The nutty protein releases slowly into your body, giving you a steady drip of energy, combating the instant rush the fructose from the Medjool dates would give you on their own. A healthy packable snack for your travels ahead!
Peanut Butter Energy Bites Recipe
Peanut Butter Energy Bites
- 2 cups peanuts
- 1 cup Medjool dates
- 1/2 cup coconut
- 1/4 teaspoon cinnamon
Preheat your oven to 180 degrees celcius.
Place the peanuts on a roasting tray and roast for around 5-10 minutes until golden brown, but not burnt.
Add the peanuts to your food processor and pulse until the nuts are coarse (around 30 seconds).
Add the Medjool dates and cinnamon, process again, for around 2-3 minutes.
Shape into balls and roll in desiccated coconut. Yum! Store in the fridge for up to 2 weeks.
Nealy's tip: Try these with any favorite nuts if you have a peanut sensitivity, and experiment with your favorite flavors. I added some vanilla extract to mine and some pumpkin pie spice for the holidays!
