Easy One Bowl Muffin Mix With Cinnamon Streusel Topping

Using just one bowl and adding a few extra ingredients keep the preparation simple yet jazz up a box mix! Easy one bowl muffin mix with cinnamon streusel topping starts with my favorite easy-to-follow muffin and bread mix. I like adding hemp seeds for some sneaky nutrition and then whip up a streusel topping to bring box mix muffins to life. Bake these and serve with fresh fruit for a special breakfast treat. When my kids were little I served muffins and fruit on our weekly breakfast menu every Saturday morning for a special treat that they looked forward to all week. Streusel Topping

Muffins mixes are so versatile you can customize and make them any flexible flavor you love. This cinnamon streusel topping is a variation of my crumble on my dairy free apple crumble cheesecake bars.  I love adding allspice, nutmeg, cloves and cinnamon for some extra flavor and spice.

A topping can upgrade a muffin from good to extraordinary.


Fresh Fruit And Purees

Another great way to jazz up a boxed muffin mix is to add fresh fruit or puree into the mix. Either mashed bananas, blueberries, diced apples or peaches are a perfect addition. You can also add a few tablespoons of pumpkin or sweet potato puree to boost the iron and even add applesauce. One mix doesn’t fit all, have some fun in the kitchen and get creative with the number of ways to enjoy your unique muffin flavor.

Easy Assembly

Start with following the directions on your box mix of choice. Next, add hemps seeds because they are easy to sneak into the muffins and add a pinch of vitamins and minerals. If you’re adding any mashed fruit, fold into your batter. Preheat your oven, and add the batter into your lined muffin pan. Lastly, sprinkle the crumble all over the tops of the prepared muffins and bake according to directions. To really add a touch of magic to this easy one bowl muffin mix with cinnamon streusel topping, drizzle over a powdered sugar glaze. Just mix together 1/2 cup powdered sugar and 1-2 tablespoons milk. Enjoy!

Easy one bowl muffin mix with cinnamon topping

One bowl and a few ingredients help jazz up and healthify a box mix with a homemade streusel topping.

For the muffins

  • 1 box Simple Mills Almond Flour Baking Mix
  • 3 eggs
  • 1/2 cup milk, water, or kefir
  • 1/3 cup oil
  • 2 tablespoons hemp seeds

For the streusel

  • 1/2 cup all purpose gluten-free flour
  • 1/4 cup  almond flour
  • 1/4 cup granulated sugar
  • 1/4 cup coconut oil
  • 1 egg
  • 1 teaspoon vanilla extract
  • pinch of salt


For the muffins

  1. Preheat oven to 350°F. Line a standard 12 cup muffin pan with cupcake liners or grease liberally with non-stick spray.

  2. Mix box mix, egg, milk (water or kefir), oil, and hemp seeds together.

  3. Evenly spoon batter among all 12 cups.

For the streusel

  1. Mix everything together in a bowl using a fork to blend the ingredients until crumbs form.

  2. Sprinkle over your prepared muffin batter. Bake 15-20 minutes.

  3. Enjoy with fresh fruit!

  4. Store leftovers in an airtight container in the refrigerator for up to 5 days.
