Raw Cauliflower Tabouli

All food tastes better when it looks pretty, don’t you agree? That’s why when I saw purple cauliflower at the store, I grabbed a head and started imagining the many ways I could use it to create a beautiful meal. Enter my raw cauliflower tabouli! With a healthified spin on the traditional dish, I paired my new obsession – purple cauliflower – with white cauliflower and a rainbow of other veggies. Fresh mint and parsley give it a fresh flavor. Plus, the pine nuts add an unusually and surprising crunch.

While this dish may look complicated, it literally takes minutes to whip up. I’m drooling as we speak. Watch as I walk you through step-by-step how to create your own:

 

Raw Cauliflower Tabouli

Ingredients

  • 2 Heads Cauliflower
  • 3 Cucumbers, Chopped
  • 2 Tomatoes
  • 1/2 Cup Fresh mint
  • 1/2 Cup Fresh parsley
  • 1/2 Cup Pine nuts, chopped
  • 3 tbsp Olive oil
  • 3 tbsp Lemon juice
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a food processor, grind cauliflower to rice-like pieces and set aside in bowl. Do not overprocess. 

  2. Chop cucumbers, tomatoes, mint, parsley, and pine nuts. Add to bowl and mix.

  3. Add olive oil, lemon juice, and salt and pepper to taste. Taste and season!

  4. Mix together and serve.
