Potato Chip Chicken: Delicious Dining for Dad

Ever get hit with a craving for fried chicken and French fries? Next time, make this better-for-you and satisfying dish instead. With only five ingredients and about five minutes of prep time, this potato-chip crusted chicken will become your new favorite gluten-free splurge meal! The chips offer a nice savory crunch that replaces the fried chicken coating yet still allows you to enjoy it guilt-free.

Potato Chip Crusted Chicken

Ingredients

  • 1 pounds boneless chicken thighs
  • 1 cup almond flour
  • 1 teaspoon dried rosemary
  • 2 eggs use more if needed
  • 1 bag potato chips
  • 1 bag colorful Terra chips
  • salt and pepper to taste

Instructions

  1. Preheatoven to 350ºF. 

  2. Season chicken with salt and pepper. Set aside.

  3. Mix flour and dried rosemary in a small bowl. Season with salt and pepper and set aside.

  4. Put each bag of chips into a separate Ziploc bag and crush. A rolling pin is a good tool for this task.

  5. Dip each chicken tender into the flour and shake off any excess. Then, dip into eggs, coating lightly. Let excess liquid fall back into the bowl. Put chicken in chip-filled Ziploc bag and shake until coated.

  6. Remove and lay breaded chicken tenders on a greased baking sheet. 

  7. Bake for 30-40 minutes, flipping once, or until fully cooked and sizzling.
