Potato Chip Crusted Chicken
Ingredients
- 1 pounds boneless chicken thighs
- 1 cup almond flour
- 1 teaspoon dried rosemary
- 2 eggs use more if needed
- 1 bag potato chips
- 1 bag colorful Terra chips
- salt and pepper to taste
Instructions

Preheatoven to 350ºF.

Season chicken with salt and pepper. Set aside.

Mix flour and dried rosemary in a small bowl. Season with salt and pepper and set aside.

Put each bag of chips into a separate Ziploc bag and crush. A rolling pin is a good tool for this task.

Dip each chicken tender into the flour and shake off any excess. Then, dip into eggs, coating lightly. Let excess liquid fall back into the bowl. Put chicken in chip-filled Ziploc bag and shake until coated.

Remove and lay breaded chicken tenders on a greased baking sheet.

Bake for 30-40 minutes, flipping once, or until fully cooked and sizzling.
