Quick and Easy Pizza Quiche

Love pizza? Well, get ready because this quick and easy pizza quiche recipe makes even the biggest pizza lovers ohh and ahh! Made with chopped up and sautéed veggies, eggs, marinara sauce, and some cheese, you really can’t go wrong. Not only will it satisfy your craving for the popular Italian meal, since it’s a lightened up version, it won’t leave you feeling all heavy and bloated afterward. So if you’re salivating for a second slice, go for it!

Healthy Pizza Quiche

Ingredients

  • 2 cups sautéed chopped veggies
  • 3 eggs
  • 1/2-1 cup pizza sauce (depending on how saucy you like it)
  • 1/2 cup mozzarella cheese
  • 1/2 cup parmesan cheese
  • Salt, to taste
  • Pepper, to taste
  • Olive oil, to grease pan

Instructions

  1. Preheat oven to 350ºF.

  2. Finely chop your veggies and sauté them. I used a medley of onion, zucchini, and mushroom. Take the time to brown your onions -- that will help you achieve a great depth of flavor!

  3. In a large bowl, mix your veggies with eggs, pizza sauce, cheeses, and seasonings. Use more or less cheese and sauce based on how you like it.

  4. Grease a round pie pan with olive oil and fill with mixture.

  5. Bake for 20 minutes or until set.
