Crispy Tofu Croutons

TOFU? Really? You might be rolling your eyes, but let me tell you this recipe may convert non-tofu eaters into tofu-cravers. Why? The tofu takes on the flavor of the marinade and when you crisp these little bites in the oven they get caramelized on the corners and taste divine. I like serving these as ‘crouton’ salad toppers but you can also serve this dish hot as a hearty main course with vegetables. Crisp away!

Crispy Tofu Croutons

Ingredients

  • 2 blocks of firm organic tofu
  • 2 tablespoons minced ginger
  • 3 cloves garlic minced
  • 1/4 cup tamari or soy sauce
  • 1 tablespoon maple syrup
  • 1 teaspoon black pepper
  • 1/4 cup olive oil

Instructions

  1. Drain the block of tofu and place on a cutting board. Set aside.
  2. In a medium bowl, whisk ginger, garlic, soy, syrup, pepper and oil.
  3. Place the bowl full of marinade on top of the tofu block and let it sit 10-25 minutes to remove excess water.
  4. Cube tofu into bite size pieces.
  5. Add tofu to marinade and refrigerate overnight or at least 4 hours.
  6. Preheat oven to 200°C/395°F.
  7. Drain marinade (to avoid burning the sauce during cooking) and transfer tofu to a baking dish, ensuring that the tofu does not overlap.
  8. Bake for 30-45 minutes or until golden crispy brown.
