I have a love affair with cauliflower. Yes, seriously! It’s such a flexible vegetable that can be jazzed up in so many different ways. I regularly whip up my cauliflower pizza steaks and cauliflower fried rice, but I’m currently salivating over these Buffalo Wing Cauliflower Bites by my new friend Caroline, a certified nutritionist, health coach, and founder of the hit blog Plant Based Blonde.
These little buffalo wing bites are bursting with flavor. Plus, while they may taste as sinfully delicious as a plate of wings from your local restaurant, they’re actually made from wholesome, good-for-you ingredients.
Make these for your next party and watch your crowd go wild or throw some on top of a salad for a satisfying lunch. These nuggets take about 10 minutes to assemble before popping into the oven and they’ll likely take just 5 minutes to disappear!
Buffalo Wing Cauliflower Bite Recipe
Buffalo Wing Cauliflower Bites
Ingredients
- 1/2 cup garbanzo bean flour
- 1/2 cup gluten-free all-purpose flour
- 1 cup cold water
- 1/2 tsp baking powder
- 1/2 tsp Himalayan Pink Salt
- 1 head cauliflower
Buffalo Sauce
- 2/3 cup hot sauce
- 1 clove minced garlic
- 1 tsp light agave nectar (more or less to heat preference)
- 2 tbsp avocado oil or melted vegan butter
Garnishes
- Celery sticks
- Bleu cheese dressing or ranch
Instructions

Preheat oven to 450ºF and line a large baking tray with parchment paper.

Cut cauliflower into bite-sized florets.

Stir together flours, baking powder, and salt. Mix in cold water to form a batter.

Work each floret through batter, allowing excess to drip off before placing on the lined baking sheet. Try not to crowd.

Bake cauliflower for 30 minutes, flipping halfway through.

While cauliflower is baking, whisk together buffalo sauce over low heat. I like to do this in a large saucepan for easy tossing once the bites are done.

When the cauliflower is done, gently swirl and toss in buffalo sauce. Serve immediately with celery sticks, vegan bleu cheese or ranch.
