Banana Walnut Granola Bars

One of my most popular recipes of all time is this gluten-free banana bread but I’m always looking for new ways to use up ripe bananas. Enter: these healthfully decadent banana walnut granola bars! While this baked recipe is great, I prefer to make these in a dehydrator. Here are some of my top choices if you want to equip yourself with a dehydrator in 2021 -its seriously one of my favorite kitchen toys! For some flexible variations of this recipe, try adding chocolate chips, omit the nuts, add other spices and more. Happy baking!

Banana Walnut Granola Bars

Ingredients

  • 2 cups old fashioned oats
  • 1 cup oat bran
  • ¼ cup flax meal
  • 1 teaspoon cinnamon
  • 4 ripe bananas, mashed
  • ½ cup coconut milk
  • ½ cup maple syrup
  • ¼ cup coconut oil, melted
  • 1 tablespoon vanilla extract
  • cup banana chips, chopped small
  • ¼ cup walnuts, chopped small

Instructions

  1. Mix all ingredients in own bowl!

  2. Spread into a baking pan.

  3. Place in dehydrator or oven.

  4. For dehydrator, check after 3 hours, score with a knife to make bars and dehydrate for 48 hours.

  5. For oven version, preheat oven to 350. Bake for 15-20 minutes or until set.

  6. Store in airtight container.

  7. Yields 20 bars.
