In light of the long line outside your local Starbucks, it appears that Fall is officially here! If you’re looking to ditch the overly sweet Pumpkin Spice Latte and broaden your drink order this season, try whipping up a batch of my spiced-up apple cider. It’s loaded with fresh fruit, citrus slices, and comforting spices! Plus, top each serving with a dollop of homemade vanilla-infused coconut cream. Yummmm!
The Perfect Sweater-Weather Sip
Apple Cider with Spiced Coconut Cream
Ingredients
For Cider
- 2 cups apple cider or juice
- ¼ teaspoon cinnamon
- ⅛ teaspoon ground allspice
- ⅛ teaspoon ground nutmeg
- 2 apple slices
- 2 orange slices
- 1 lemon slice
For Coconut Cream
- 1 cup coconut cream, chilled
- ½ teaspoon vanilla
- ¼ teaspoon pumpkin pie spice
- Pinch of salt
To Serve
- Cinnamon sticks
Instructions

In a large saucepan, combine all cider ingredients.

Bring pot to a boil and then reduce to a simmer for 20 minutes. Shut off flame and allow cider to steep, covered, for an additional 10 minutes.

Using an electric hand beater, whip together all topping ingredients. Ensure that coconut cream has been sufficiently chilled so it whips properly.

To serve, strain cider then divide into 4 cups. Serve with a dollop of coconut cream. Alternatively, chill the cider for 2-3 hours and serve cold with cream on top. Serve with a cinnamon stick to stir the cream.
