Quinoa Salad with Herbs, Chickpeas and Pistachios
Ingredients
- 1 cup Cooked Red Quinoa
- 1 can Chickpeas
- 3 Baby Cucumbers (roughly 2 cup chopped)
- 1/4 cup Red Onion
- 1/3 cup Roasted Pistachios
- large handful Fresh Mint
- large handful Fresh Parsley
- large handful Arugula
- generous drizzle of my Uber Lemony Dressing Uber Lemony Dressing

Prepare your ingredients: Cook the quinoa if you haven’t already and let it cool. Rinse and drain the chickpeas, chop the cucumbers and onion, and roughly chop the herbs.

Combine everything: In a large bowl, add the cooked quinoa, chickpeas, cucumbers, red onion, pistachios, mint, parsley, and arugula.

Dress it up: Drizzle generously with Uber Lemony Dressing and season with salt and pepper to taste.
