Quinoa Salad with Herbs, Chickpeas and Pistachios

Ingredients

  • 1 cup Cooked Red Quinoa
  • 1 can Chickpeas
  • 3 Baby Cucumbers (roughly 2 cup chopped)
  • 1/4 cup Red Onion 
  • 1/3 cup Roasted Pistachios
  • large handful Fresh Mint 
  • large handful Fresh Parsley
  • large handful Arugula 
  • generous drizzle of my Uber Lemony Dressing Uber Lemony Dressing

Instructions

  1. Prepare your ingredients: Cook the quinoa if you haven’t already and let it cool. Rinse and drain the chickpeas, chop the cucumbers and onion, and roughly chop the herbs.

  2. Combine everything: In a large bowl, add the cooked quinoa, chickpeas, cucumbers, red onion, pistachios, mint, parsley, and arugula.

  3. Dress it up: Drizzle generously with Uber Lemony Dressing and season with salt and pepper to taste.

  4. Toss and taste: Give everything a good mix. Taste and adjust seasoning or add more dressing if needed.

  5. Serve right away or chill in the fridge - this salad only gets better as the flavors mingle.
