Simple Box Mix Breakfast: Pumpkin Spice Pancakes

Let’s keep it our little secret that these fluffy pancakes started with a box mix! This is a great breakfast shortcut using a box mix, a scoop of pumpkin puree for a dose of nutrition, and spice for a festive holiday kick. Believe it or not, breakfast can be this simple!  Your family will wake up to the cozy smell of fall from the pumpkin spice and maple syrup. I can’t wait to show you how easy it is to make this simple box mix breakfast: pumpkin spice pancakes.

Pantry Ingredient List

My favorite pancake mix to tear open and pour into a bowl is King Arthur Gluten Free Classic Pancake Mix because you can create flexible recipes with ONE mix! This pancake mix is the backbone of  the recipe so make sure you pick your favorite kind or stock up on my go-to King Arthur pre-mixed pancake mix. You will need eggs, oil or butter, and milk as instructed on the bag. I buy in bulk and store in my beautiful food storage containers for easy reach. Add your canned pumpkin puree for a Fall inspired touch then fold in your pumpkin pie spice. Together, with one mix, you can transform plain pancakes to pumpkin spice pancakes. Drizzle with pure maple syrup and enjoy with fresh berries or fruit of choice.

Soft, fluffy, and irresistible. Let the warm syrup seep into the pancake before cutting. Mouth-watering!

Pumpkin Pie Spice

This spice is staple in my spice drawer year round. If you run out, blend together:

  • 3 tablespoons ground cinnamon
  • 2 teaspoons ground ginger
  • 2 teaspoons nutmeg
  • 1 ½ teaspoon ground allspice
  • 1 ½ teaspoon ground cloves
  • Pinch of ground ginger for good measure, optional

Mix all of the ingredients above and use one tablespoon for this pumpkin pancake recipe. It is that easy! Store leftovers in a container to reuse.

The Best Syrup

After your pancakes are cooked, they aren’t super sweet, so syrup adds depth to the pumpkin pie spice and adds moisture to the pancake bread. I use pure maple syrup instead of pancake syrup. Use what you like because no pancake is complete without the essential syrup! Warm your syrup up slightly to bring out the flavors of the pure maple before you drizzle over your pancakes. Enjoy!

Simple Box Mix Breakfast: Pumpkin Spice Pancakes

A shortcut breakfast using a box mix, pumpkin puree, and pumpkin pie spice. Drizzle with maple syrup to complete your Fall pancake breakfast.

Cook Time 8 minutes
Servings 5 pancakes

Ingredients

  • 1 cup pancake Mix
  • 1 egg
  • 1 ½ tablespoon oil or melted butter
  • cup milk
  • cup can 100% pumpkin puree
  • 1 tablespoon pumpkin pie spice
  • Pure maple syrup for drizzling

Instructions

  1. In a large bowl, mix together pancake mix, egg, oil or melted butter, milk, puree, and spice.

  2. Add a non-stick skillet on your stove top over medium low heat. Use non-stick spray if needed.

  3. Add a heaping ¼ cup of pancake mix into your heated pan. I cook three at a time.

  4. Allow a few bubbles in the batter to appear on the surface of the pancake, this lets you know when to flip. About 1 minute.

  5. Using a heat proof spatula, test the bottom. If the pancake holds together when you gently move it then give it a quick flip. Allow to cook another minute or so.

  6. Add your finished pancakes to your plate, drizzle with pure maple syrup and enjoy!

  7. Store leftovers in an airtight container. Reheat pancakes in the microwave folded in a damp cloth. Good for up to 4 days.
