Most mornings, my family and I opt for a simple plate of fresh eggs with sauteed veggies. But, some days call for a special, more indulgent breakfast, like this Banana Bread French Toast!
Unlike a traditional French toast, this dish relies on banana bread as the base. Since this popular morning meal is all about the bread, the kind you use makes a huge difference. And, let me tell you, banana bread offers a unique flavor that will have you dreaming of a second slice. If you have a favorite banana bread recipe or boxed mix then great — use that. But, I personally like to cheat and use store-bought banana bread. It saves so much time and tastes just as delicious!

Banana Bread French Toast
Ingredients
For French Toast
- 2 eggs
- 1/3 cup milk, Whole, coconut, or almond
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- Pinch of salt
- 1 loaf of banana bread
- 1 tablespoon butter
For Banana
- 1-2 bananas, sliced
- 1 tablespoon butter
For Toppings
- 1 can coconut milk, chilled, solids only
- 1 teaspoon vanilla
- Maple syrup, to taste
- Assorted berries, to garnish
Instructions

For french toast: whisk the eggs, milk, cinnamon, vanilla, and salt in a shallow baking dish.

Place banana bread slices in the mixture to coat. Then flip to allow the bread to soften, about a minute on each side.

Meanwhile, heat butter in a skillet. Add soaked bread slices and cook until the underside is lightly brown, about 2 minutes. Flip and cook similarly on the second side.

Transfer french toast to a large serving platter.

For bananas: Wipe skillet clean with a paper towel. Heat butter then add banana slices to the pan, cooking on each side for 1 minute until caramelized. Remove and place on platter.

For topping: In a blender, whip coconut cream (remove water) and vanilla until smooth. Drizzle over french toast platter. Add a drizzle of maple syrup and finish with a garnish of berries for color.
