What’s a succotash? It’s a simple dish consisting of sweet corn, lima beans (or shell bean) and it’s frankly the fastest and simplest side dish to whip up in a flash. Once you assemble your ingredients it’s your one-pot ticket to a colorful, flavorful and nourishing side dish. Succotash marries well with a simple grilled chicken or if you’re feeding a crowd try my halibut dish to compliment.
There are so many fun ways you can play with the base of this: use different colored peppers, accent with spice combinations or add other vegetables. The secret to this dish being blow-your-socks-off special is to really caramelize your onions as it provides a great base for whatever you add afterward. Season well and enjoy.

Succotash Side Dish Secret
Ingredients
- 1 large white onion
- 2 tablespoons olive oil
- 2 red peppers
- 3 cups fresh corn kernels or 1-2 bags of frozen corn
- 1 bag of shelled edamame or lima beans
- 1/3 cup fresh basil
- Salt and pepper to taste
Instructions

Sauté onion until well browned, about 20 minutes

Add red peppers to cook for about 3-5 minutes

Add corn, frozen beans and basil and cook just until the dish is heated through

Season with salt and pepper and serve
Recipe Notes
If you want to make this dish dairy, sauté the onions in clarified butter instead of ghee.
For a kid-friendly dish (and in the event that you cant find shelled beans or edamame) substitute frozen baby peas and omit the basil.
