One of my favorite meals to create and eat is a jazzed up salad. I know some of you may be thinking, “Really, just a salad?!” But, yup! When a salad is made just right, it can become a satisfying meal that leaves you yearning for seconds. Life Salad

I created this shortly after my favorite vegetarian restaurant in Hong Kong, Life Cafe, closed its doors. Back in the day, I stopped by the eatery often and ordered the same thing every time: Life salad, dressing on the side. Thankfully, the head chef, Carlos, gave me some notes with the famed ingredients. I’ve taken a bit of a creative twist, but it’s just as addicting!
