Quick and Easy Pizza Quiche
Watch as I show my friend Melissa—a flexible chef-in-training—how easy it is to make:
Healthy Pizza Quiche
- 2 cups sautéed chopped veggies
- 3 eggs
- 1/2-1 cup pizza sauce (depending on how saucy you like it)
- 1/2 cup mozzarella cheese
- 1/2 cup parmesan cheese
- Salt, to taste
- Pepper, to taste
- Olive oil, to grease pan
Preheat oven to 350ºF.
Finely chop your veggies and sauté them. I used a medley of onion, zucchini, and mushroom. Take the time to brown your onions -- that will help you achieve a great depth of flavor!
In a large bowl, mix your veggies with eggs, pizza sauce, cheeses, and seasonings. Use more or less cheese and sauce based on how you like it.
Grease a round pie pan with olive oil and fill with mixture.
Bake for 20 minutes or until set.
