Healthified Homemade Ice Cream Sandwiches

If you ask me, the only thing better than a delicious chocolate chip cookie is a chocolate chip cookie homemade ice cream sandwich! This treat is so easy to make and you can customize it to your dietary and taste preferences. I like to use homemade gluten-free chocolate chip cookies, but if you’re in a pinch for time, then store-bought cookies will work just fine. Since I try to avoid dairy in my house, I also opt for a dairy-free ice cream (any brand will do because the cookie steals the show). Go grab your cookies, ice cream, your favorite toppings, and a biscuit cutter and let’s get started. PS I keep these bad boys all individually wrapped in the freezer for emergencies. Dangerous, but smart.

Homemade Ice Cream Sandwiches


  • 10 gluten-free chocolate chip cookies
  • 1 tub dairy-free ice cream
  • Mini chocolate chips and sprinkles, optional


  1. Cut gluten-free chocolate chip cookies with a biscuit cutter, making them all the same size

  2. In container, cut dairy-free ice cream into approximately one inch thick sections

  3. Remove paper and cut ice cream rounds with biscuit cutter

  4. Slide ice cream onto one cookie

  5. Place a second cookie on top to create sandwich

  6. Roll side of ice cream sandwich in mini chocolate chips or sprinkles
