Healthy Raw Chocolate Macaroons

Life’s little pleasures lie in the simplest of things, like chocolate. These raw chocolate macaroons are a great kids party food, after school snack, or a sneaky treat when you’re craving something sweet. I am even filing these goodies for my Passover menu plans! Karin, mom and nutritionist, uses coconut sugar which ranks lower on the glycemic index than regular sugar, making it a smarter choice. You can find raw cacao power on I-herb or at your local health food store. Now go get measuring and don’t forget to lick the bowl! Enjoy Karin’s recipe below.

Raw Chocolate Macaroons

Servings 20 macaroons

Ingredients

  • 2/3 cup coconut sugar
  • 1 egg plus 1 egg white
  • 11/2 cups of desiccated coconut sugar free
  • 1 tablespoon raw cacao powder
  • 1 teaspoon vanilla pod or 1 vanilla essence

Instructions

  1. Place dry ingredients (sugar, coconut, vanilla and cacao powder) in a bowl and stir until well combined. Whisk the egg and egg white together and add to dry ingredients. Mix well. The mixture should not be too wet. Cover the bowl and place in the fridge for half an hour.
  2. Pre-heat the oven to 320 (F). Using wet hands, make small balls, place 2 inches apart on a baking tray lined with parchment paper and and bake for 10-15 minutes or until golden brown.
  3. Allow to cool in the tray.

Recipe Notes

These little macaroons can be frozen. To serve, simply thaw them.
