I should have named this kid-friendly salad the “happy mom salad.” I did cartwheels when my kids tried this and gobbled up their vegetables. The dressing is slightly sweet and perfectly suited for a kid’s palate. The thick sauce is bright orange in color, creamy, and bursting with flavor. I keep this, and my cashew dressing, as staples in the fridge every week so that a family salad is always at arm’s length. Label the date that you make your dressing and throw it out after 3 days (although chances are that you won’t have any left over).

Ingredients
Dressing
- 2 tablespoons finely chopped onion
- 1/2 tablespoon fresh ginger minced
- 1 tablespoon carrot shredded fine
- 1 tablespoon celery chopped
- 2 tablespoons rice wine vinegar
- 1 teaspoon lemon juice
- 1/2 tablespoon tamari sauce
- 1 1/2 teaspoon tomato paste
- 2 teaspoons agave syrup
- 1/3 cup olive oil
- Salt and pepper to taste
Salad:
- Mix up your kids favorite veggies to toss with dressing.
Instructions

In a blender add onion, ginger, carrot, celery, vinegar, lemon juice, tamari, tomato paste and agave. Pulse till smooth.

With machine running, slowly drizzle in the olive oil.

Taste. Add salt and pepper to flavor.
Recipe Notes
To entice your kids, feel free to experiment with reducing the garlic, onion and ginger, and just to get them used to it add a pinch more agave or carrot. If it's sweet and mild and tasty you may get your kiddos to try salad.
