Halloumi Cheese Skewers Recipe

Halloumi Cheese Skewers

Ingredients

  • Halloumi cheese
  • Oil, for spraying pan
  • Sliced zucchini
  • Chopped bell pepper
  • Cherry tomatoes
  • Lemon juice, optional

Instructions

  1. Cut the halloumi into bite-size squares. I like to slice it thinly to give it more surface area so that it crisps all over.

  2. In a lightly oiled frying pan over medium heat, brown each piece of halloumi on both sides, about 6 minutes total. Remove to cool on a plate.

  3. In the same skillet, char the sliced zucchini and tomatoes for a few minutes on each side just to add color. Season with salt and pepper.

  4. Thread the halloumi, zucchini, bell peppers, and tomatoes onto skewers.

  5. Lightly squirt fresh lemon juice on top of the skewers and serve.

Recipe Notes

  • Play around with quantities depending on how many skewers you're making or how filling you want to make each one.
  • Looking for a fresher take on these cheese skewers? Swap the zucchini for cucumber and the cherry tomatoes for strawberries.
