Pesto ti adoro! Pesto I adore you!
This Italian favorite is one of the kings of my kitchen: it’s a dip, a sauce and a dressing — perfecto! Cilantro pesto adds flavor and color to virtually anything it lands on, jazzing up almost any recipe.
In other good news, you don’t just have to stick to traditional basil when making the perfect pesto. In this Nealy variation I’ve used cilantro instead, as it pairs exquisitely with these chicken lettuce cups. Go ahead and experiment — and share your recipes below!
Cilantro Pesto Recipe
- 1/3 cup pine nuts
- 1 1/2 - 2 cups of cilantro
- 2 cloves garlic
- 1/3 cup olive oil
- Juice of one lemon
- Salt and pepper to taste
Place all ingredients in a high speed blender.
Pulse to blend. It's that simple!
You may choose to add a bit more or less oil to achieve desired consistency.
May be stored for a few days when chilled.
