When your kids wake up, do they immediately crave something sweet and heavy – like a sugary, cakey donut? Join the club! While donuts may sound like the best breakfast ever to our kids, they rarely earn a spot on my breakfast table. I use the word “rarely” because I don’t believe in denying my family of the fun stuff. With that said, when we do indulge, I healthify. Enter these better-for-you pancake donuts!
You can whip them up with a gluten-free pancake box mix for convenience. Then, just pour your batter into mini donut pans, bake, and decorate! Super simple, super delicious. This sweet treat tastes great covered in yogurt and fruit, or coated with some raw maple syrup and dipped in cinnamon coconut sugar. Get creative and have some fun with the toppings and presentation. Make them for breakfast or a snack. If you ask my kids, they’re also perfect for lunch, dinner, and everything in between!

- 1 box pancake mix
- Coconut oil to grease pan
- Maple syrup
- Coconut sugar & cinnamon for topping
- Powdered sugar for topping
- Yogurt & berries for topping
