Are you craving something savory, sticky, and full of flavor?
These Adobo Chicken Wings are a Filipino-inspired twist on classic baked wings, delivering bold, addictive flavor in every bite. They’re marinated in a simple mix of pantry staples – soy sauce, vinegar, garlic, and bay leaves – then roasted until golden, crispy, and irresistibly caramelized. It’s everything you love about traditional chicken adobo, made snackable and super easy.
So what makes these wings stand out? It’s the flavor balance: salty, tangy, garlicky, and just a little punchy from the vinegar. The garlic roasts to sweet, golden perfection while the bay leaves infuse the whole dish with a warm, savory depth. It’s comfort food with a twist – hearty enough to serve for dinner, but just as crowd-pleasing on a party platter.
These wings are incredibly flexible too. Serve them with a side of steamed rice to soak up the extra juices, or pair them with a light, crunchy salad for contrast. They also work beautifully as a finger food appetizer – no forks needed! Whether you’re hosting friends, feeding your family, or just want a no-fuss meal that delivers big on flavor, these Adobo Chicken Wings are your new go-to.
And the best part? No complicated steps, no overnight marinades – just real, satisfying flavor in under an hour. Classic Filipino ingredients meet the ease of a one-pan meal, proving that delicious doesn’t have to mean difficult.
Leftovers? If you’re lucky enough to have any, they reheat like a dream – juicy, tender, and just as crave-worthy the next day! You can even shred the meat and toss it into tacos, rice bowls, or salads for a totally new twist. However you serve them, these wings bring serious flavor, every single time.
Adobo Chicken Wings
Ingredients
- 2 lbs Chicken wings patted dry
- 1 1/4 tsps Kosher salt
- 1/2 tsp Black pepper
- 1 small 6-ounce) White onion thinly sliced (about 3/4 cup
- 1 2 oz Garlic head cloves separated, peeled, and smashed (about 14 garlic cloves)
- 1/3 cup Soy sauce (such as Silver Swan)
- 1/3 cup White vinegar (such as Datu Puti)
- 2 tsps Neutral cooking oil (such as grapeseed oil)
- 2 to 3 Dried bay leaves
- Cooking spray
Instructions
-
Preheat your oven to 425°F (220°C). Line a baking sheet with foil or parchment for easy cleanup and lightly coat it with cooking spray.
-
Season the wings. In a large bowl (or zip-top bag), toss the chicken wings with kosher salt and black pepper until evenly coated.
-
Add the flavor. Add the thinly sliced onion, smashed garlic cloves, soy sauce, white vinegar, cooking oil, and bay leaves to the wings. Mix well so everything is coated in that adobo marinade.
-
Let it sit (optional but recommended). For deeper flavor, you can marinate the wings for 30 minutes to an hour—though they’re delicious even if you roast them right away.
-
Arrange for roasting. Spread the wings and all the marinade contents (onions, garlic, bay leaves) onto the prepared baking sheet in a single layer. Make sure the wings have a little space between them for even browning.
-
Roast it up. Roast for 35–40 minutes, flipping the wings halfway through, until they’re golden brown, caramelized, and cooked through.
-
Serve and savor. These wings are packed with umami-rich, tangy, garlicky goodness. Serve hot with your favorite sides—or enjoy straight from the tray!
