Crispy Tuna Fritters

  • 2 cans tuna, in olive oil
  • 3 large eggs
  • Sautéed chopped veggies, try onions, mushrooms, carrots, zucchini, or anything you have on hand
  • Salt and pepper, to taste
  • Olive oil, for frying


  1. In a mixing bowl, combine all ingredients. Set aside.

  2. Over medium heat, lightly coat a skillet with olive oil.

  3. Once the oil is hot, but not smoking, spoon patty-size portions of tuna mixture into the pan. 

  4. Let cook for several minutes, until the bottom is cooked and easy to flip. Flip and repeat.

  5. Serve immediately.
