Marilyn’s Spicy Chicken

Ingredients

  • 12 bone-in chicken thighs
  • 1 tbsp chili flakes
  • 3 tbsp sriracha
  • 3 tbsp honey
  • 2 tbsp grated ginger
  • 12 cloves garlic crushed
  • Juice of 1 lime
  • 1 tbsp paprika
  • 1 tbsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp Dijon mustard
  • ¼ cup olive oil
  • 1 tsp Italian seasoning

Instructions

  1. Preheat your oven to 400°F (200°C).

  2. In a large bowl, whisk together chili flakes, sriracha, honey, ginger, garlic, lime juice, paprika, garlic powder, Dijon mustard, olive oil, Italian seasoning, salt, and pepper.

  3. Add the chicken thighs and toss until fully coated in the marinade.

  4. Transfer the chicken to a baking dish or sheet pan lined with parchment paper.

  5. Bake for about 40 minutes, or until the chicken is golden brown and cooked through (internal temp should be 165°F).

  6. Optional: Broil for an extra 2-3 minutes at the end to get crispy edges.

  7. Garnish with fresh herbs or lime wedges and serve hot.
