Homemade Ice Cream Sandwiches

Ingredients

  • 10 gluten-free chocolate chip cookies
  • 1 tub dairy-free ice cream
  • Mini chocolate chips and sprinkles, optional

Instructions

  1. Cut gluten-free chocolate chip cookies with a biscuit cutter, making them all the same size

  2. In container, cut dairy-free ice cream into approximately one inch thick sections

  3. Remove paper and cut ice cream rounds with biscuit cutter

  4. Slide ice cream onto one cookie

  5. Place a second cookie on top to create sandwich

  6. Roll side of ice cream sandwich in mini chocolate chips or sprinkles
