Cilantro Pesto

Ingredients

  • 1/3 cup pine nuts
  • 1 1/2 - 2 cups of cilantro
  • 2 cloves garlic
  • 1/3 cup olive oil
  • Juice of one lemon
  • Salt and pepper to taste

Instructions

  1. Place all ingredients in a high speed blender.
  2. Pulse to blend. It's that simple!
  3. You may choose to add a bit more or less oil to achieve desired consistency.
  4. May be stored for a few days when chilled.
