Better For You Spaghetti Zoodles


  • 1 cup parsley
  • 1 cup mint leaves
  • 3/4 cup extra-virgin olive oil
  • 1/2 cup pecans
  • 3 cloves garlic
  • 1 1/2 tablespoons fresh lime juice
  • 1/2 teaspoon salt
  • Freshly ground pepper to taste
  • 5 zucchinis


  1. Make the pesto: In a blender, combine all ingredients and puree untilsmooth. Taste and adjust quantities to fit your preferences. Set aside.

  2. Wash and cut tops off of each zucchini.

  3. Using a spiralizer, shape zucchinis into noodles.

  4. Transfer to a mixing bowl and top with pesto. With your hands, massage pesto into zucchini noodles until evenly coated.

  5. Serve.
