Healthy Baked Peaches Stuffed with Crispy Oats

Ingredients

  • 2 ripe yellow peaches pitted and halved
  • 1/4 cup brown rice cereal  Erewhon Cinnamon Brown Rice Cereal
  • 1/4 cup quick oats
  • 3 tbsp coconut oil solid
  • 2 tbsp coconut sugar
  • 1 tbsp oat flour
  • 1 tsp cinnamon
  • honey for drizzling

Instructions

  1. Preheat oven to 350F and prepare a baking dish with parchment paper and set aside.

  2. Use a melon baller to scoop out the center of the peach. Leave enough of the peach so that it's stable but scoop out enough to fill with oats.

  3. Place the flour, sugar, oats, cinnamon and cereal into a mixing bowl and stir until combined. Add in the coconut oil (be sure it's on the more solid side) and use your hands to mix the ingredients together until you have small crumbles.

  4. Fill your peaches with your oat mixture and place the them into the prepared baking dish.
