Stovetop Caramel Popcorn

P.S. Most caramels call for extra ingredients like baking soda or vanilla. Liam's a kid so all he uses is sugar and butter and it is perfect!

For Popcorn:

  • 1/3 cup popcorn kernels
  • 3 tablespoons canola oil
  • Salt, to season

For Caramel:

  • 1/3 cup butter
  • 1/3 cup sugar

For Popcorn:

  1. Add oil and popcorn into a heavy pot.

  2. Remove from heat immediately when the last kernel pops. Season with salt while still hot.

For Caramel:

  1. Heat butter and sugar in a small sauce pot.

  2. Whisk until sugar dissolves and mixture achieves a golden color.

  3. Be careful not to burn!

  4. Pour desired amount of caramel on top of popcorn.

  5. Allow to set for a few minutes in the fridge.

Recipe Notes

Liam drizzles the caramel such that some pieces stay salty.  It's less heavy than when the caramel coats every bite.
Liam also loves topping this with an indulgent drizzle of chocolate to finish!
