A Twist On Chrissy Teigen's Amazing Chipotle-Honey Chicken

Ingredients

Marinade (Adapted)

  • 1 cup BBQ sauce
  • cup brown sugar
  • cup bourbon
  • 15-20 garlic cloves
  • 1 tsp hot pepper sauce
  • ¼ cup tomato paste
  • ¼ cup canned peppers (I uses piquillo)
  • 2 tbsp sriracha sauce
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 ½ tsp salt
  • Pepper, to taste

Chicken (Adapted)

  • 8-12 chicken thighs, bone in
  • Salt and pepper, to taste

Salsa (Use Original)

  • 1 large firm mango, pitted and finely diced
  • 1/2 firm avocado, diced
  • 3 tbsp finely diced red onion
  • ¼ cup cilantro leaves, lightly packed
  • 1/2 lime
  • Kosher salt and freshly ground black pepper

Instructions

  1. In a blender, combine all marinade ingredients. Set aside. 

  2. Generously season chicken with salt and pepper. 

  3. Place chicken in a large Ziploc bag and add sauce. Let marinade in refrigerator for at least 2 hours, or up to 1 day. 

  4. Preheat oven to 375ºF and line a baking sheet with foil. 

  5. Transfer marinated chicken from bag to pan and bake about 40-45 minutes, or until fully cooked

  6. While chicken cooks, toss together salsa ingredients. 

  7. Once chicken is fully cooked, top with salsa and serve.
