Omega Boost Granola

Ingredients

  • 4 cups oats
  • 2 cups assorted seeds
  • 1/2 cup unsweetened coconut
  • 2 cups nuts (your choice - cashews, almonds, walnuts)
  • 1/4 cup flax meal
  • 2 teaspoons cinnamon
  • Pinch of salt
  • 1/4 cup coconut oil
  • 1/4 cup agave to taste
  • 1/4 cup maple syrup
  • 1 tablespoon vanilla extract
  • 1 cup assorted fruits: goji berries, dried blueberries, figs, dates, raisins, cranberries

Instructions

  1. In a large bowl, mix oats, nuts, seeds, coconut, and flax. 


  2. In a small bowl, mix maple, agave, oil, and vanilla.

  3. Mix dry and wet ingredients. Spread on cookie sheet and bake at 325 degrees Fahrenheit (163 Celsius). Check every 5 to 10 minutes to avoid burning. Remove when golden and add dried fruit. 

Recipe Notes

Tips by Nealy:
1. If your child does not like nuts or picks them out of food, just put the nuts in a food processor before adding them to the oats. Blend them and your child will have no idea they are even there!
2. Coconut oil may be used for so many wonderful things! Coconut oil is available at Three Sixty, Just Green, and O2H (50 Stanley Street) in Hong Kong. My favorite use, aside from consumption, is as a body oil. Use it before showering or soak up the benefits all night and shower in the morning. The oil is great at combating dehydrated and dull skin tone. You can use it on babies and kids as well. Get ready to glow!
3. Agave is a healthy low glycemic sweetener that won't affect your child's blood sugar levels in the same way that sugar does. Agave is about 1.5 times sweeter than sugar so you do not need to use much. Grab some agave at Three Sixty, O2H, or Gateway (188 Des Voeux Road Central) in Hong Kong.
4. Flax meal is a great source of fiber and omega and excellent for digestion. It is available at most grocery stores, including Three Sixty.
5. Granola can always be customized to your liking - no rules here.
