Craveable Gluten-Free Crackers

  • 2 1/2 cups walnuts
  • 2 1/2 cups cubed zucchini/courgette
  • 1 tablespoon chopped fresh rosemary
  • 1/2 cup ground flax
  • 1/4 cup hemp seeds
  • 2 teaspoons salt
  • Water as needed


  1. Soak walnuts for two hours. Rinse.
  2. Grind walnuts in food processor then transfer to bowl.
  3. Process zucchini and rosemary in processor until finely chopped. Add to walnuts.
  4. Add flax, hemp and salt.
  5. Add water to make spreadable.
  6. Spread thin and then place in dehydrator.
  7. After a couple of hours, remove and slice cracker outline with knife.
  8. Place back in dehydrator at 115 degrees Fahrenheit for about 12 hours or until crispy.

Recipe Notes

I almost always like to share recipes that are versatile; that you can make anywhere with little of no equipment but in this case, a dehydrator is a must. My dehydrator was the best kitchen appliance I have ever purchased and is so much fun. I own the Excalibur-get any model you can afford or any size that fits. Try using a combination of carrots and zucchini, add a shallot or an onion and even some garlic for extra flavor. You could even substitute pecans or a combination of almonds and cashews for the walnuts. Have fun!
