Coat sushi grade Ahi tuna in sesame seeds and sear briefly on each side. Cool and slice.

Roughly chop arugula, add desired amount of dressing and place in ring mold.

Add 1/2 avocado finely sliced on top.

Sauté 2 oyster mushrooms, season and then roughly chop. Add on top of the avocado.

Place on top the seared tuna, then garnish with microgreens and sprinkle some wasabi powder.
