Gluten Free Chocolate Chip Banana Bread

Ingredients

  • 1 ¾ cup gluten free flour
  • ½ cup granulated sugar
  • ½ cup brown sugar dark or light
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • 3 medium ripe bananas
  • 2 large eggs
  • ½ cup unsalted butter
  • 2 teaspoon vanilla extract
  • 1 cup chocolate chunks

Instructions

  1. Preheat oven to 350°F. Lightly grease a 9 x 5 x 3 inch loaf pan and line with parchment paper. Set aside.

  2. In a large bowl whisk together the flour, sugars, baking soda, salt and cinnamon. Set aside.

  3. In a separate medium-sized bowl mash the bananas really well. Then add the eggs, cooled melted butter and vanilla.

  4. Using a wooden spoon or spatula lightly fold the wet ingredients into the dry ingredients until just combined. Gently fold in the chocolate chips. (Do not over mix!)

  5. Pour the batter into the prepared pan Bake for 45-50 minutes, or until the edges of the bread are golden brown but the center is light and soft.
