Easy one bowl muffin mix with cinnamon topping

One bowl and a few ingredients help jazz up and healthify a box mix with a homemade streusel topping.

Ingredients

For the muffins

  • 1 box Simple Mills Almond Flour Baking Mix
  • 3 eggs
  • 1/2 cup milk, water, or kefir
  • 1/3 cup oil
  • 2 tablespoons hemp seeds

For the streusel

  • 1/2 cup all purpose gluten-free flour
  • 1/4 cup  almond flour
  • 1/4 cup granulated sugar
  • 1/4 cup coconut oil
  • 1 egg
  • 1 teaspoon vanilla extract
  • pinch of salt

Instructions

For the muffins

  1. Preheat oven to 350°F. Line a standard 12 cup muffin pan with cupcake liners or grease liberally with non-stick spray.

  2. Mix box mix, egg, milk (water or kefir), oil, and hemp seeds together.

  3. Evenly spoon batter among all 12 cups.

For the streusel

  1. Mix everything together in a bowl using a fork to blend the ingredients until crumbs form.

  2. Sprinkle over your prepared muffin batter. Bake 15-20 minutes.

  3. Enjoy with fresh fruit!

  4. Store leftovers in an airtight container in the refrigerator for up to 5 days.
